A sweet and savoury way to start the day. Glaze Primo bacon with a touch of maple syrup and garnish the waffles with fresh fruit.

Primo Rind On Middle Bacon2x5 kg

  • 18 slices Primo rind on middle bacon 
  • 2.1/4 cups plain flour pinch salt
  • 4 TSP baking powder
  • 1.1/4 TSP baking soda
  • 2 TBSP brown sugar
  • 70 gm butter
  • 3/4 cup milk
  • 250 ml dark beer
  • 2 large free range eggs
  • Top quality maple syrup
  • 2 small bananas
  • 1 punnet of strawberries

  • Sift and combine dry ingredients in a large bowl, make a well in the centre

  • In a saucepan, over low heat, heat the butter, milk and beer until the butter has completely melted

  • Whisk the eggs into the warm liquid

  • Slowly pour the wet ingredients into the well of dry ingredients and whisk until smooth

  • Preheat and lightly grease a waffle iron with butter

  • Pour a small ladle into the centre of the iron (not too much or the batter will overflow once the iron is closed)

  • Cook until the waffle is golden brown and cooked through. Transfer to a plate and keep warm

  • Meanwhile, heat a heavy-based frypan over medium heat

  • Add the bacon and fry until golden on both sides

  • Add a drizzle of the maple syrup and cook until the bacon is glazed and the syrup reduced

  • To serve, place a warm waffle on your plate, top with 3 slices of glazed bacon and drizzle with a good amount of maple syrup 

  • Add your favourite fruit and eat immediately
