Primo Diced Pancetta

Fettuccine Carbonara

  • 1 Tblsp Olive Oil
  • 2 Tblsp Butter
  • 1 Clove Garlic, finely chopped
  • 1 Onion, finely chopped
  • 1 Pkt Primo Diced Pancetta
  • 200ml Cooking Cream
  • 1 Egg Yolk
  • 40g Grated Parmesan cheese
  • ½ cup Reserved Cooking water
  • 400g Fettuccine Pasta, cooked & drained
  • To Serve:
       Parmesan Cheese
       Parsley Leaves
       Cracked Black Pepper

Method of recipe

  • Heat the oil and butter in a large non-stick frying pan over a medium heat and sauté the garlic and onion 2 -3 minutes.
  • Add the Primo diced Pancetta to the pan and sauté stirring 1 minute.
  • Stir in the combined cooking cream and egg yolk, grated parmesan and cooking water, heat stirring until sauce is smooth.
  • Toss the cooked fettuccine into sauce and heat for a further 2 minutes.
  • Serve Fettuccine hot garnished with shaved parmesan, parsley and black pepper.


  • This sauce is best made fresh and cannot be stored.
