Primo Shredded Ham

  • 300 gm Primo traditional shredded ham 
  • 1 TBSP olive oil
  • 1 brown onion chopped
  • 1 garlic clove crushed
  • 2 carrots chopped
  • 2 celery sticks chopped
  • 8 cups of chicken stock
  • 1 kg frozen peas
  • Lemon thyme for garnishing

  • In a large frypan over a medium to high heat, saute shredded ham until golden brown and set aside
  • Heat oil in a large saucepan over medium heat, add onion. Cook uncovered for 5 to 6 minutes or until soft 
  • Add garlic, celery, and carrots and cook for a further 5 minutes
  • Add stock and simmer for 10 minutes or until the vegetables have softened
  • Add 3/4 of the peas to the soup. Bring to the boil. Simmer for 10 minutes. remove from heat
  • Using a stick blender, blend soup until you have a coarse consistency
  • Return to the saucepan
  • Add ham, remaining peas and salt and pepper
  • Simmer for 7-10 minutes before serving. Garnish with sprigs of lemon thyme
