This zesty salad combines cucumbers, cherry tomatoes and Primo roast beef with kaffir lime, coriander, ginger, chili and basil.

  • 400 gm Primo roast beef
  • 200 gm cherry tomatoes quartered
  • 1 lebanese cucumber sliced
  • 1/2 red onion sliced
  • 1 Long red chilli seeds removed and sliced
  • 1 cup coriander leaves picked
  • 1 cup mint leaves picked
  • 1 cup thai basil leaves picked
  • 1 cup peanuts salted and roughly chopped
  • 1 cm ginger peeled and sliced against the fibres
  • 2 kaffir lime leaves, stems removed and torn into pieces



  • 1 lemon zested and juiced
  • 1 lime zested and juiced
  • 2 TBSP sesame oil
  • 2 TBSP fish sauce
  • 2 TBSP brown sugar
  • 2 TBSP soy sauce
  • 1 clove crushed garlic

  • First make the dressing by mixing all the ingredients together and mixing well until the sugar is dissolved, set aside
  • In a large bowl mix all other ingredients then add the Primo beef
  • Re-mix the dressing just before serving and add to the bowl, mix well

 You can make this salad in advance, just add the dressing when you are ready to eat it
